Do you like mexican food? So if you ask me the answer is definitely YES! I mean, could there be anything better than enjoying a deliciously flavorful meal of healthy Mexican vegetables, high protein beans, and sweet corn? This vegetable mix tastes particularly good when combined with fried onions, roasted garlic, some spices and melted cheese! And when you add avocado aioli to it, it's so good that you'll want to eat baked sweet potato ships from the oven every day!

What I absolutely love about Mexican food is that most of the dishes are very easy to prepare! Stuffed sweet potatoes are also super easy and the filling is mixed together very quickly! First, the sweet potatoes are baked until they are soft. This works both in the oven and in the faster microwave variant. So that they cook through better, you should prick the sweet potatoes several times with a fork beforehand.
This is how you make stuffed sweet potatoes out of the oven
While the sweet potatoes are baking, you can prepare the filling. Heat some oil in a pan and fry the onions and peppers for about 3-5 minutes until they are soft and browned. Then add the garlic and toast everything for another minute until it smells nice. Now you can season it with salt, pepper or other spices as you like. Then set this mixture aside for now.
Once your sweet potatoes are done, you can take them out of the oven and let them cool down a bit. Then you cut it in half and scrape the inside out with a spoon. Leave a thin layer of potatoes (about 1cm) in the peel so that they stay stable. Now roughly mash the soft, baked sweet potato meat with a fork. Then you add the fried onions, paprika and garlic. Also the beans and corn and mix everything up. Of course, you can add any vegetables and other spices as you like.
Now brush the edges of the sweet potato vessels with a little oil. Now add the filling spoon by spoon and sprinkle vegan cheese over it. If you can't find vegan cheese in any store, you can have mine too vegan cheese sauce and drizzle over your baked sweet potatoes. Then, put your stuffed sweet potatoes in the oven and bake for 5-10 minutes until the cheese has melted. That's it! Food is ready!
Simple avocado aioli
I like to serve Mexican stuffed sweet potatoes with homemade avocado aioli. This is not only easy to prepare and delicious, but also much healthier than conventional aioli! In addition, you only need a few ingredients. Just an avocado, garlic, salt, pepper and a splash of lemon juice. I like to stir in a little vegan mayonnaise to make it creamier. You can also use coconut cream, plant-based cream cheese, or soy yogurt instead. Simply puree all the ingredients until creamy and add to the baked sweet potatoes as a dip! Baked sweet potatoes taste even better than they already do.
